Mirsada's 'Too Much Parsely' Recipies

POTATO LEEK MUSAKA

Two bunches parsley, chopped (not processed)
set aside

4 to 5 leeks washed and cut into crescents
Sautee in olive oil
salt sperately
grinded red pepper (optional)
add in parsely

Preheat oven 450

6 fist sized potatoes (any kind)
slice into chips
rinse in colander
add fresh ground pepper and sea salt
olive oil

Layer in dish starting and ending with potatoes
Add shredded cheese or mochi
Cover

Bake for 30-40 minutes

Leeks have folic acid!  Perfect to take over to your friend who had just had a baby! Great for women to repair cells.
